Started in 2018 as a two-man operation brewing out of a converted stable, once every eleven days, on a brewkit they cheerfully describe as rickety. The beers were hop-forward and fresh then and still are: the difference is a brewery twelve times the size, fifteen staff, and exports reaching around thirty countries.
Polly's Brew Co make what they call Modern Beer: hop-forward, fresh stuff built around experimenting with contemporary hops and flavour, with an emphasis on fruit-forward tropical and citrus notes. The range spans pale ales, IPAs, double IPAs, sours and dark beers, with names like As Above, So Below double IPA (8.0%), Rosa double IPA (8.4%), Bigger Petals IPA (6.2%), Good Mood Oat Cream Pale (5.5%) and Pineapple Krush Pineapple IPA (6.0%) giving a good flavour of where they take it.
